Autumn: My Favorite Time for Food!

This is also the time of year when we really begin to get back into cooking again. After a few months of lighter/cooler meals and potluck barbecues we re-enter our kitchens armed with hearty recipes, some passed down for generations and some new treats you are dying to experiment with.

My mother fancied herself as the ultimate chef and took MUCH joy during the Fall to really do her thing… which was wonderful for us because we got to sample everything!

I loved it all but like most kids my faves were the desserts! Even though she’ll never tell all of her secrets, I will post some of the ones she gave me that are “okay” to share with the world.

Mama Maria’s Baked Apples

What You Need:

8 large apples (red delicious works great)
¾ cup rolled oats
2 tablespoons sugar
6 tablespoons dark brown sugar
3 tablespoons butter
2 tablespoons chopped nuts (such as pecan or almond)
2 teaspoons citrus juice
¼ teaspoon nutmeg
¼ teaspoon cinnamon
½ cup crushed vanilla wafers (or cinnamon crackers)
1 teaspoon vanilla

What You Need To Do:

  • Preheat over to 350°F.
  • In a bowl, mix oats, vanilla wafers, brown sugar, chopped nuts, butter, citrus juice, vanilla, nutmeg and cinnamon.
  • Take a piece of aluminum foil large enough to cover the individual apple.  Wash apples but do not peel them.  Section them into 8 slices keeping them as uniform as possible then remove the core. Reassemble the apple pieces (4 – 6 slices) then spoon on the mixture.
  • Add the last few slices then wrap the apple with the foil to hold it together.
  • Repeat for each apple.
  • Place apples in a deep baking dish then bake for about 30 to 40 minutes until tender.

    Those sound really good! I might have to treat the family at Christmas and make them for a special treat. I might just have to test the recipe out before hand too! Thanks for posting, I can’t wait to try.

    Dang girl sounds good. Although I have no family where I am at I will really try to make these for myself and Matt maybe a little further into the season. I LOVE to cook !!
